Unlike other origins, Kenyan factories (wet mills) often ferment the parchment for 24-48 hours, wash it, and then soak it for another 24 hours under clean water. This meticulous “soak” stage is what drives the phosphoric acidity and clean cup profiles that specialty roasters demand.
