A 72-Hour Fermentation Masterclass
The secret to Kenya’s iconic bright acidity lies in the unique **double-fermentation process**. Unlike other origins, Kenyan factories (wet mills) often ferment the parchment for 24-48 hours, wash it, and then soak it for another 24 hours under clean water. This meticulous “soak” stage is what drives the phosphoric acidity and clean cup profiles that specialty roasters demand.
Density Grading
Floating and channel grading ensures only the densest AA and AB beans proceed to the drying beds.
Parchment Maturation
Slow drying on raised skin-drying tables for 12-15 days to stabilize water activity (aw).
